Fischers' on the Green has been a staple in fine dining in the Chippewa Valley for over 40 years. What sets us apart from other restaurants is the Dry Aging of our beef. This process of aging beef was very common 40 years ago, but since the creation of vacuum sealed packs, it has long since dissapated and usually only seen in fine dining restaurants or upscale grocery markets. Our beef is dry-aged for 12 days on site. During this process a crust forms on the outside of the loin. This layer is trimmed away, leaving steaks that are superior in tenderness and flavor. During the dry aging process, 25% of the beef is lost, but the juices are absorbed into the meat, enhancing the flavor and tenderizing the steaks. All of our steaks are hand-cut to order, ensuring the freshest cut of meat in town. |
